We have always believed seasonality and sustainability are synonymous. Using produce as it is in season not only ensures the highest quality product but also maintains a delicate balance in the environment around us and other overseas markets. Minimalising wastage and the need for year-round hydroponic growth of products.

We will go to great lengths to promote and support some of the great local producers that the Goulburn Valley has to offer.

Our menu will take an organic, ever-changing form with dishes rotating on and off as produce is at its finest - we don’t believe in quarterly menu changes, we will adapt as soon as an ingredient becomes unsustainable to have on our menu.
